Serves 10–12 (1 cup portions)
Stovetop
In a large soup pot, brown 2 boneless, skinless chicken thighs cut into bite-sized pieces, along with 1 sliced chorizo sausage, 2 chopped celery stalks and 1 chopped onion.
Pour in 6 cups water, the packet contents and two 400g tins of diced tomatoes. Boil hard for 15 minutes, then cover and simmer for around 70 minutes, topping up with water if it starts looking dry.
Add 200–300g raw peeled prawns and simmer just until they’re cooked through. Season with salt and pepper.
Slow cooker
Brown the chicken, chorizo, celery and onion first, then add everything else and cook on high for 8 hours. Drop the prawns in for the final 30 minutes, until pink.

Rathmines Butchery offers local delivery across the Lake Macquarie area. Minimum order for delivery is $100, with a $10 delivery fee. The fee applies only to the following areas:
Standard delivery days are Tuesday and Friday mornings, between 9:00am and 12:00pm. Please place your order online by 10:00pm the day before delivery, or phone the shop during trading hours. Payment can be made by cash or card on delivery.

Pickup is available from 8:00am to 5:00pm.
Please allow a minimum of 2 hours notice between placing your order and collection.
