Pull apart a store-bought barbecue chicken, toss it through noodles with a creamy peanut dressing, then top with crispy shallots and fresh mint. Quick, fresh and made for warm evenings when you’d rather not cook.

This is the kind of dinner you make when nobody has the energy to cook. Pork mince with lemongrass, makrut lime and chilli through it, tossed with noodles and on the table in under 20 minutes. Rice works just as well if that’s what you’ve got.

Serves 4

A jar of pesto, a barbecue chicken and a packet of pasta. That’s the whole thing. The tomatoes blister under the grill while the penne boils, then it all goes back in the pan together with a splash of the pasta water to bring it into a sauce. Twenty minutes, one pan to wash, and nobody complains.

One pan, one oven, six people fed. Red curry chicken sits on top of a bed of coconut dhal with kale through it, so the fat renders down and the skin goes crisp while everything underneath gets all that flavour. Nothing to do for the last 40 minutes except let the oven get on with it.

Chicken enchiladas are the sort of dinner that makes a Tuesday feel like an event. Tortillas rolled around shredded chicken, baked under sauce and cheese until the top turns golden and the whole thing goes gooey underneath. Most of it can be prepped ahead, so the oven does the work while you get on with everything else.

A warm beef salad that eats like a proper meal. Steak sliced over black-eyed peas and charred corn, with a chimichurri that cuts through the richness and pulls the whole thing together. It’s the kind of dish that works just as well on a warm night as it does on a plate in the middle of the table for everyone to help themselves.
